Pumpernickel is not an ordinary bread. It not only has a darker colour, but also a sweeter taste than other whole grain breads. The ingredients are quite simple – Whole grain rye, water, salt and yeast. The secret behind its unique character is its special baking process. The bread is baked in special steam baking ovens for a period of at least 20 hours. The temperatures are with approximately 100°C relatively low, so that the bread is rather steam-cooked than baked. The process has the effect that the Pumpernickel receives its dark colour and additionally its slightly sweet flavour. At this time, when coming directly from the oven, the Pumpernickel is still as soft as pudding. Therefore, it takes some more 24 hours for the dough to cool down before it can be sliced and packed.
